    Pea shoots are the second most popular microgreen. They are packed with vitamins, minerals, and dietary fiber including A, C, E, B1, B2, B3, B6, protein, fiber, omega 3, and micronutrients! Because they are rich in iron, pea shoots prevent iron deficiency which leads to weakness and chronic fatigue. They are a great source of natural proteins which helps to support healthy skin and muscle tissue. Full of Vitamin C, a powerful antioxidant, these tender shoots help lower stress and raise our immune system. They also aid in lowering blood pressure and are being studied for their ability to reduce oxidative stress that has been tied to the development of cancer.

  • USE

    When added to a salad their grassy flavor and crisp texture can add a great foundation for any salad. Add them to chicken when making a quick Asian stir-fry. Finally, you can add them as a garnish on a soup or blend them in to add mild flavor while adding fiber to your dish. Personally, I like to eat my pea shoots fresh with the addition of protein like cubed chicken or tuna fish with a little mayonnaise. That is it. Fresh and filling. These micro peas have stolen my palate and my heart! Cooking microgreens may result in a loss of nutritional value. Have a creative way to use them… let us know!

  • STORAGE

    To help your shoots get their longest shelf life store your microgreens in a dry, cool place. Wash them just before eating them. Storing them in a resealable bag or container with a lid works well. Add a paper towel if needed to remove water - Do not store them wet.  Your microgreens should store for 7-14 days in the refrigerator.  Many find these greens stay fresh for up to 30 days!
