Pea shoots are the second most popular microgreen. They are packed with vitamins, minerals, and dietary fiber including A, C, E, B1, B2, B3, B6, protein, fiber, omega 3, and micronutrients! Because they are rich in iron, pea shoots prevent iron deficiency which leads to weakness and chronic fatigue.
