Cilantro is a powerhouse containing vitamins, A, B2, B5, and B9, C, E, and K, phosphorus, calcium, iron, potassium, zinc, and beta-carotene. Micro Cilantro shares three times more provitamin A than its mature counterpart. Vitamin E, essential for a proper functioning immune system, also aides in cellular repair, wound healing, and skin moisturization. The higher levels of vitamin K also aid in blood coagulation. Stigmasterol is found in small quantities which can help to lower LDL (bad) Cholesterol and raise HCL (good) Cholesterol levels at the same time. All this means they help reduce inflammation, aid in digestion, ease chronic disease and play a role in eye health too.

STORAGE
To help your shoots get their longest shelf life, store your microgreens in a dry, cool place. Wash them just before eating them. Storing them in a resealable bag or container with a lid works well. Add a paper towel if needed to remove water. Do not store them wet. Your microgreens should store for 7-14 days in the refrigerator. Many find these greens stay fresh for up to 30 days!
