Spicy Turkey Sandwich with Peppy Salad Mix

Quick sandwich with loads of flavor that satisfies even the hungriest!



We love sandwiches! This recipe is one of those quick go-to's that I have made time and again that never fails to satisfy. I get a kick of joy when my boys tell me they loved lunch!

Who can resist a flavorful bite? From an early age, I have made sandwiches. It was my father with his eye for detail that helped guide the simple details to enhance the flavor of each yummy work of art. Fitting that this will post as we step into Father's Day weekend.


My father taught me the importance of spreading mayo evenly across the whole slice of bread to enhance the flavor when adding vegetables on top. Additionally, he emphasized the need to spread mustard evenly on the other slice of bread to complement the taste of the meat.


He mentioned that placing the cheese on top of the meat was crucial for folding the meat side over the veggie side effortlessly. He would then skillfully slice each sandwich diagonally for convenient packaging or artistic presentation. Every sandwich was a harmonious blend of flavors, with each ingredient contributing to the overall taste. His techniques have been handed down and are still being used in our kitchen today by successive generations, which I greatly appreciate. Love you, Dad.


Spicy Turkey with Microgreens

Serving Size: 2 sandwiches


Your Ingredient List:

  • 8 Slices Deli Turkey sliced thin

  • 4 Slices Pepper Jack Cheese  (our your favorite)

  • 4 Slices large Tomato 

  • 4 Slices Bread (21 grain, wheat, white - your choice)

  • 1 oz Peppy Salad Microgreens 

  • Sprinkle of Radish Microgreens

  • 1 Tbsp Mayonnaise 

  • 1 Tbsp Mustard


Directions:

  1. Take two slices of your favorite bread and lay them face open, with flat ends facing.

  2. Spread your favorite mustard on top of the first slice of bread.

  3. On top of this slice, also add your layer of turkey, next add cheese, then layer your sliced tomatoes. I like to put meat directly on the mustard so the flavor of the meat can be enhanced by the mustard.

  4. On the other slice of bread, start by spreading your mayo (or Miracle Whip if you choose) onto the bread, making sure to cover the slice of bread from end to end.

  5. Next, add your layer of prepared microgreens to your bread.

  6. At this point, you can add any other variation of vegetables you desire.

  7. To finish and close your sandwich, carefully fold the first slice of bread, including meat, cheese, and tomato, over and onto the other half.

  8. Cut your sandwich in half, plate it with a side of your choice, and enjoy!


The variations to the sandwich are literally endless.

  • You could change the meat to a deli meat such as chicken or ham.

  • Try substituting avocado spread for your mayo to add a layer of nutty-buttery flavor.

  • We have also added either a dollop of sweet zucchini relish or a few of our spicy bread and butter pickles that we canned last season from the garden to bring a tangy-sweet layer of flavor!

  • And, don't forget to try adding a layer of hatch chilis atop the meat.


You can pair this with a side of baby carrots, some chips & salsa, or my favorite is a spoonful of potato salad! That recipe will be coming soon!
