Chef Kosta's Pesto Recipe
Chef Kosta invited me into his kitchen at Vintage 61 to teach me how easy it is to make pesto. Here is his quick and easy recipe!
In a food processor add:
1/4 cup Pine Nuts
1/2 cup Parmesan Cheese
1/2 cup Olive Oil (EVOO)
1 tsp Salt
2 cloves Garlic (or more to taste)
Blend until smooth and almost butterlike -
then add
6 ounces of Basil
Take a final blend until smooth and enjoy!
A few little tricks I gathered while with Chef Kosta include these:
To add a deeper flavor try toasting your pine nuts before use.
To increase flavor add more basil, garlic, salt, and/or pine nuts as needed.
To lighten the grocery budget try using walnuts or macadamia nuts in place of pine nuts which can ease the expense.
Adding pesto to my cooking options has been particularly beneficial for me, allowing me to make the most of my microgreens before they spoil. By replacing basil with any microgreen in the recipe, I can create pesto that can be frozen in an ice cube tray. This way, I can conveniently thaw and use small pesto cubes whenever needed!
